Meatballs & Mac 'n' Cheese

Talk about comfort food! This is one of my favs - it’s easy to throw together for dinner and it’s a crowd pleaser! This recipe serves four, so in our home we have it two nights in a row… it’s just as delicious the second day!

Meatballs

ingredients

  • 1 lb Ground Beef

  • 1 Egg

  • Salt & Pepper about 1/4 tsp of each

  • 1/2 tsp Garlic Powder

  • 1/2 tsp Italian Seasoning

  • 1/2 tsp Butcher Rub

  • 3/4 Cup of Shredded Parmesan Cheese

  • 2 Tbs Ketchup

Directions

Preheat oven to 400F

Toss all ingredients into a medium bowl and mix together (I like using my hands!) Divide into eight balls and place onto a parchment lined sheet pan. Bake for 25 minutes

Feel free to adjust the amount of spices and herbs to your preferred taste!


Mac ‘n’ Cheese

ingredients

  • 3 Cups Shredded Sharp Cheddar Cheese

  • 1 Cup Heavy Whipping Cream (Half & Half or Milk works too, just not as rich and creamy)

  • Salt & Pepper to taste

Directions

Boil your favorite noodles according to their directions. We like Banza Elbows! Add a little olive oil to the boiling water before you toss in the noodles so they don’t stick together! Drain and set aside.

Simmer the cream in a sauce pan on medium/low heat. As soon as the cream starts to get hot start adding in the cheese, slowly, stirring gently as you add it. Turn the heat to low and stir slowly until all the cheese is melted and the sauce is creamy!

Add in the noodles and stir together. Add a little salt and pepper to taste!
