Shrimp Alfredo with Mushrooms

In the mood for something creamy? Something special? Something low carb!? Have I got the perfect recipe for you! This Shrimp Alfredo is a bit of a treat in our home… but it’s actually pretty simple and easy to make! This recipe makes about 6 servings (depending on how hungry you are)! Buon appetito!

Ingredients

  • 1/2 Cup butter (1 stick)

  • 2/3 Cup of heavy whipping cream

  • 8 Cloves of fresh garlic minced

  • 2 Cups grated parmesan cheese

  • Salt & pepper to taste

  • A splash of white wine

  • 2 Tbs olive oil

  • 4 Cups sliced mushrooms

  • Shrimp, raw, deveined (about 5 per person)

Directions

Noodles: Boil your favorite noodles according to their directions. For a low carb option we like using Banza Spaghetti! Add a little olive oil to the boiling water before you toss in the noodles so they don’t stick together! Drain and set aside.

Shrimp & Mushrooms: Warm 1 Tbs of olive oil in a large pan over medium heat. Add sliced mushrooms and two cloves of minced garlic. Saute for about eight minutes. Add one more Tbs of olive oil and toss in the shrimp and two more cloves of minced garlic. Saute for about three minutes then flip for another three minutes.

Alfredo Sauce: Cut butter into pieces in a medium sauce pan and melt over low heat. Add heavy whipping cream. Bring to a low simmer and add four cloves of minced garlic and salt and pepper. Add parmesan cheese slowly while stirring. Add a splash (or two) of white wine. Let the sauce simmer until thick and creamy. Don’t let it boil or get too hot.

Toss together the noodles, sauce, mushrooms and shrimp! Top with fresh parmesan and parsley or a lemon wedge. Serve with your favorite green, like asparagus or a salad!
