Bell Pepper & Tomato Salad

Flavorful, colorful, fresh, crisp, summer salad… the perfect side-dish for any summer meal! Or… by all means, grab a spoon and eat the whole bowl for lunch!

Ingredients

  • 2 Cups (about two) bell peppers (you choose the colors!) - diced

  • 2 Cups (10oz) cherry tomatoes - sliced in half

  • 1 Small red onion - diced

  • 3-4 Cloves of garlic - minced

  • 1 Cup parsley - chopped

  • 2 Tbs fresh lemon juice

  • 2 Tbs red wine vinegar

  • 3 Tbs olive oil

  • 1 tsp cumin

  • Salt & pepper to taste

Directions

Combine all ingredients into a serving bowl and toss together! Serve fresh or keep in fridge until ready to serve. Feel free to experiment with this salad - Try adding quinoa, cucumber, avocado or mango!
