This Harvest Soup is the perfect recipe for fall! I harvest all the last veggies and herbs from my garden and turn them into a comforting soup - I stock up in the freezer, then on those cold winter days (that are just around the corner) I heat up a bowl and savor each warm spoonful!
Ingredients
1 large butternut squash - seeds and skin removed
2 medium tomatoes
1 medium yellow onion
2 carrots
1 bell pepper - any color
2 jalapeños
1 bag (10 oz) frozen lima beans
3 Tbs olive oil
2 Tbs thyme
Salt & pepper to taste
6 oz can tomato paste
2 cups of milk
Directions
Chop all veggies into roughly 1” cubes and toss together in a large mixing bowl with olive oil, thyme, salt and pepper.
Roast on a large sheet pan for 30 minutes at 425F
A few minutes before the veggies are done, add tomato paste to a large dutch oven at bring to a simmer over medium heat. Simmer for about 5 minutes, stirring and spreading the paste over the bottom of the dutch oven.
Add the roasted veggies to the dutch oven and stir everything together. Let simmer about more minutes. Then add the milk and bring back to a simmer.
The last step is to puree the soup. I let the soup cool a little and use my blender to achieve a rich creamy texture. You can also use an immersion blender if you have one!
I make a double batch and freeze a bunch for later!
This soup is super easy to modify! You can use different types of squash… I used delicata and butternut! You can use any type of tomatoes, like roma or cherry! You can use any type of milk or milk alternative. I used a mix of 2% and heavy whipping cream, just because that’s what we had in the fridge! Want more of a kick? Add extra jalapeños! You get the idea… make it your own!
