Sausage Soup

This Lentil Soup is perfect for those chilly Autumn or Winter days! The first time I made it my husband asked what we were having for dinner and when I told him “Lentil Soup” you could see the disappointment in his face… So now we just call it “Sausage Soup” and he gets way more excited!

Ingredients

  • 1lb Ground Sausage

  • 2 Tbsp Olive Oil

  • 1 Onion, diced

  • 5 Cloves Garlic, minced

  • 5-6 Carrots, chopped

  • 4-6 Cups Chicken Broth

  • 1 1/2 Cups Lentils, rinsed

  • Salt & Pepper to taste

  • Fresh Herbs to taste

    • Try sage, thyme, oregano or rosemary

  • Kale, chopped

Directions

In a dutch oven, heat 1 Tbsp of olive oil over med/high heat and add ground sausage. Break up the sausage and cook until browned. Place in a bowl and set aside.

Add another 1 Tbsp of olive oil into the dutch oven and toss in onions, carrots and garlic. Saute until onions start to look translucent.

Add back the sausage and pour chicken broth and lentils. Add salt, pepper and fresh herbs to taste. Let simmer for about 1 hour stirring occasionally.

Just before serving, toss in the kale (give it just enough time to soften).

Serve with freshly baked bread!
